Imagination Food Design was established in 2003 by Dean Dickinson on his return from the UK in Dean spent 7 years working at various establishments in and around London developing his skill as a chef including a 6 month stint at Harrods. Dean held various head and Executive head chef positions during his time spent working in London. His career in London positioned him well to establish Imagination Food Design once returning to South Africa. Looking Back Imagination Food Design has attained an amazing client base over the past ten years and catered for some of Port Elizabeth’s Land Mark events including. VW Uitenhage Opening of the Auto Pavilion Opening of there Motor Museum Opening of the Paint Shop Various awards events over the past ten years. Investec Bank Various year end functions along with catering for the All Blacks rugby team during there tour to SA. Catering for President Jacob Zuma and various events over the years. The perfect answer for those evenings when you don’t want to spend the night in the kitchen slaving over a hot stove. Imagination in a box was awarded the 2015 African Excellence award for the best fine foods product. This is an amazing recipe to wow your guests at your next dinner party. The combination of flavours works so well together and this dish can be served in a variety of ways. Slow braised steak infused with leeks onions carrots and fresh garden peas in a rich pepper sauce topped with crispy puff pastry. Cucumber Pineapple and sweet chili salad This is a simple salad to make using only 5 ingredients and compliments any braai. Rub the flour, salt, lemon zest and butter and until the mixture resembles breadcrumbs. Beat together the egg yolk and whole egg and slowly add these to the mixture and mix until the pastry forms a ball. Wrap the ball in cling film and refrigerate for two hours to rest the pastry. Roll out the pastry on a lightly floured surface to 3mm in thickness and cut using a pastry cutter. Place in a muffin tray ready to fill with the custard. Whisk the egg yolks and sugar together then add the boiling cream and continue whisking to prevent the eggs from scrambling. Pour the custard mixture into the tart cases and bake the tarts for 40 minutes or until the custard appears set.
